Sodium Alginate
Sodium Alginate, with CAS No. 9005-38-3 and E-number E401, is a natural polysaccharide extracted from brown seaweed. It is a widely used food grade thickener, gelling agent, stabilizer and film-forming agent. Sodium alginate dissolves easily in water to form a viscous solution, and reacts with calcium ions to form a heat-stable gel.
