Recommended Dosage and Application Points of Neotame in Chewing Gum

I. Core Recommended Dosages (Distinguished by Formula Parts)

Neotame has an extremely high sweetness (7000-13000 times that of sucrose), so its dosage in chewing gum is very small. Precise control is required to ensure flavor balance. The industry's practical recommended dosages are as follows:

1. Gum base part: The recommended dosage is 40ppm (i.e., 0.004g/kg). For conversion reference, 4g of neotame is added per 100kg of gum base. It is suitable for sugar-free chewing gum, mint chewing gum, etc., which can ensure the long-lasting release of sweetness and meet the flavor requirements of the chewing cycle of chewing gum.

2. Sugar coating/coating part: The recommended dosage is 15ppm (i.e., 0.0015g/kg). For conversion reference, 1.5g of neotame is added per 100kg of sugar coating. It is applicable to chewing gum with sugar coating, balancing the instant sweetness of the surface and the long-lasting sweetness of the internal gum base, so as to avoid excessive sweetness on the surface or flavor discontinuity.

3. Overall formula (compromise scheme): The recommended dosage is 20-30ppm (i.e., 0.002-0.003g/kg). For conversion reference, 2-3g of neotame is added per 100kg of overall raw materials. It is suitable for ordinary chewing gum, taking into account production cost, flavor performance and sweetness duration.

 

II. Compliance Instructions

1. Chinese standards: According to GB2760 "National Food Safety Standard for the Use of Food Additives", neotame can be used in appropriate amounts according to production needs in chewing gum, with no additional limit requirements, but it only needs to comply with the acceptable daily intake (ADI) of 0.02mg/kg body weight.

2. International standards: The Codex Alimentarius Commission (CAC) stipulates that the maximum usage of neotame in chewing gum is 1000mg/kg (1g/kg), which is much higher than the practically recommended dosage. There is no need to worry about exceeding the standard in normal production, which is suitable for global trade needs.

 

III. Practical Addition Methods

1. Addition in gum base: Due to the poor dispersibility of neotame in fat-soluble gum base, pre-treatment is required first. Fully dissolve neotame with propylene glycol (solubility 20%) or glycerin (solubility 10%), then mix and stir evenly with the gum base to avoid flavor imbalance caused by excessively high local sweetness.

2. Addition in sugar coating: Adopt the carrier pre-mixing method. Fully mix neotame with carriers such as powdered sugar and maltodextrin in a ratio of 1:1000, then add to the sugar coating formula to ensure uniform dispersion of neotame in the sugar coating and avoid sweet spots.

 

IV. Compound Optimization Suggestions

When neotame is used alone, its sweetness is single. Compound use with other sweeteners can improve flavor coordination, prolong the duration of sweetness, and optimize costs. The core schemes are as follows:

1. Neotame + sucralose: Compound in a ratio of 1:1, which can enhance the synergistic effect of sweetness, prolong the duration of sweetness during chewing of the gum, improve the purity of taste, and reduce the slight peculiar smell of a single sweetener.

2. Neotame + erythritol: Compound in a ratio of 1:5000. The cool taste of erythritol can complement the sweetness of neotame, reduce the overall raw material cost, and at the same time meet the needs of sugar-free formulas and improve the taste level of products.

 

V. Precautions

1. Dosage control: Neotame has extremely strong sweetness. Excessive addition will lead to bitter residue. It is recommended to conduct small-batch tests first and adjust the dosage according to the target sweetness.

2. Storage conditions: Neotame should be stored in a sealed container in a cool and dry place, avoiding long-term contact with strong alkali and high-temperature environments to prevent slight loss of sweetness.

3. Flavor adaptation: When paired with flavoring agents such as mint and fruit, the dosage of neotame can be appropriately reduced by 5-10% to avoid the sweetness masking the core aroma of the flavoring agent.
